Chili Parotta


Chili Parotta is a very famous dish in tamilnadu.Here we get frozen parottas,instead of eating just like that we can make this.My husband really loves this with raitha.
I tasted this once in my friend's home and made it.It turned out so good.

Ingredients:
Parotta--------------4
Tomato---------------3
Red Onion------------1
Cumin Seeds----------1/4 spoon
Fennel Seeds---------1/4 spoon
salt-----------------1 spoon
chili Powder---------1 1/2 spoon
Oil------------------

Procedure:
Heat the oil and fry the cumin seeds,fennel seeds.
Fry the onions and tomato.
Add chilli Powder and little garam masala, salt and mix throughly.
Thaw the parottas for 1 min in microwave and tear it into pieces.
Then add them with the masala and mix it.
Chop the parotta pieces and mix it well.
Leave it in heat for some 5 min and then remove it.

It tastes yummy.Try it and leave comments.

Paneer Butter Masala


Paneer Butter Masala is a very common side dish for Nan and fried rice.My husband is a big fan of this dish.My friend Arthi taught me this recipe and its a great pleasure for me to share with you.

Ingredients:
ChoppedOnion
Butter
Fennel Seeds
Cumin Seeds
GingerGarlic Paste
Paneer
Tomato
Chillipowder
Turmeric Powder
Coriander Powder
Peas
Capsicum
Garam Masala

Procedure:
1 Heat the Kadai,pour one tablespoon Cooking Oil, 2 tablespoon butter
2 Once heated add 1/4 tsp Cumin seeds,1/4 tsp Fennel Seeds,as it splitters add chopped onions
3 When the aroma arises add ginger garlic paste and garam masala.Wait
till the raw smell goes.
4 Then add chopped tomatoes,chilli powder,turmeric powder and coriander powder
5 Once the gravy cooks add peas and capsicum and salt.
6 Then add fried panner
7 When the aroma arises add whipped cream(2 cups) for thick gravy and
let it cook for 5 min and remove from heat.

If you do not want heavy gravy need not add whipping cream.

Banana Cutlet


Banana Cutlet is one of the healthier evening time snack.I first made it and my friends liked it.Here you go

Ingredients:
Bananana-----------------2
Potato-------------------3
Grenchilli---------------2
Onion--------------------1 (big)
Ginger Garlic Paste------1 spoon
Garam Masala-------------1/2 spoon
Salt---------------------1 1/2 spoon
chilli Powder------------1/2 spoon
Maida flour--------------3 spoons
Bread Crum Powder
Oil for frying

1 Peel the Bananas and cook in microwave for 5 min.
2 Cook the Potatoes and keep it ready.
3 Heat the oil and fry the onions,green chili and mix with ginger garlic paste,garam masala.
4 Then add the potatoes and mix it with the masala.
5 After some minutes add the banana and salt,chili powder and mix it thoroughly.
6 Remove from heat and mix it with maida flour.
7 Make small balls with this and flatten it.
8 Heat Oil in a frying pan .
9 Garnish the balls with bread crums and fry it.

It tastes good with tomato sauce.

Winter Melon Kootu


This is one of the favorite side dish for my husband.My mother in law is an expert in this and i got this recipe from her.It really does tastes good.

Ingredients:

Winter Pumpkin---------------1 cup
tamarind paste---------------1 spoon
Tomato-----------------------1
cooked chana Dhal or Toor Dhal.

To fry and grind
Coriander Seed--------------2 spoons
Chana Dhal------------------2 spoons
Urad dhal-------------------2 spoons
Asafoetida------------------1/4 spoon
Red Chilli------------------3
Pepper----------------------5
Cocunut---------------------3/4 cup

Procedure:
1 Fry the above and grind it.
2 While grinding add the tomato and grind it.
3 Fry the winter melon (white Pumpkin) for a few seconds
4 Allow it to cook in tamarind paste.
5 When it is mostly cooked add the masala (we grinded),salt,little turmeric powder.
6 Cook for some time till it is not so thick or watery.
7 Finally add the cooked dhal and mix it thoroughly.
8 We can also add some fried peanuts in it.

This is really good when we mix with hot rice.Try it and dont forget to post the comments.

Pav Bhaji


Pav Bhaji is one of the all time favorite of North Indians.I called some of our friends for dinner and i tried this.It came out well and all appreciated.Here you go..

Ingredients:
1. Cauliflower – 1cup (Chopped)
2. Potato – 1 /2cup (Chopped)
3. French Beans – 1/ 4th cup
4. Peas – 1cup
5. Carrot – 1 /2 cup (Chopped)
6. Capsicum (Green pepper) – 1 cup (1/ 2 cup in thick chopped )
7. Tomato – 2cup chopped
8. Ginger – 2tsp (Paste)
9. Garlic – 2tsp (Paste)
10. Onion – 1cup chopped
11. Red chili Powder – 1tsp
12. PAV BHAJI masala – 2tsp
13. Turmeric Powder – 1 /4th tsp
14. Lemon juice – 6-8tsp
15. Salt to taste
16. Chopped green coriander – 1 /4thcup for garnishing
17. Butter – 2cubes for BHAJI.
18. Oil – 2-3tsp
19. PAV

Procedure:

1 Cook all the vegetables nicely.
2 Heat oil and butter together and add onion,ginger garlic paste and fry till onion turn into golden brown.
3 Add tomatoes ,chilli powder,turmeric powder,pavbhaji masala and fry it thorougly.
4 Add all the cooked vegetables now and mash it well.
5 The vegetables and the masala should mix properly and no vegetables should be seen.
6 At last add lemon juice and garnish with coriander leaves.
7 Toast the Pav in butter and serve hot.

It is so spicy and yummy.You cannot stop eating.

Chenna Samosa Chat




Chat items are really liked by all.I did it for a dinner party and all liked it.

Ingredients:

Chole
Samosa
Imli chutney
Corriander chutney.

Let us see how to make each of this.

Samosa:

You can buy frozen samosas and fry it.
Orelse you can make samosas

Ingredients for Samosa Filling:


Potatoes------------4 ( medium sized)
Peas----------------1 cup
Onions--------------2 (big)
Green chilli--------2
Cumin seeds---------1 spoon
GaramMasala---------1 spoon
Corriander powder---1 spoon
Chilli Powder-------1/2 spoon
GingerGarlic Paste--1 spoon
Turmeric Powder
Salt

Cook Potatoes and Peas .
Heat the pan and fry onions,cuminseeds,green chilli.
After it turned golden brown add the cooked vegetables.
Add the masala,ginger garlic paste and other powders along with salt and mix it well.
Now the filling for samosa is ready.

Samosa Cover:

Ingredients :

Maida-----------4 cups
Ghee------------2 spoons
Salt
Baking Powder

Mix the ghee with a pinch of baking powder.
When bubbles are formed add maida and salt and mix it together and make a soft dough.
Fold the dough like a triangle and fill it with the mixture and fry it.

For chole:

Soak the chenna for 10 hrs.
Cook it in cooker and allow it for 3 whistles.
After some time fry the cuminseeds,sombu,onion,tomatoes,garam masala,dry mango powder.After it is fried add the chenna and mix it thoroughly.
Chole is ready

Now let us make the chutneys.

Imli Chutney;

Imli-----------------2 spoons of imli paste.
salt-----------------1 1/2 teaspoon
sugar----------------3/4 teaspoon
black pepper powder---1/4 spoon

Mix the paste with water and make it watery.
Add the rest and mix it well.

Coriander chutney

Coriander leaves-----1 bunch
Garlic cloves--------2
Ginger---------------1/2 "
Green Chilli---------2

Grind all the ingredients and the chutney is ready.

Now we can arrange the chat

First put chole
Pour the imli chutney
Put the samosa pieces
Put the coriander chutney
Put chole and continue this .

For Garnishing

Put some chopped onions,coriander leaves and nylon sev.

Now the chat is ready and tastes yummy.

Pesaratu



My husband like this dish a lot.After eating in a restaurant,i tried it.It turned out so good.Here you go!

Ingredients:

For Dosa:

Dosa Dough------4 cups.
Onion-----------2 (medium sized)
Green chillies--3
Ginger paste----1 spoon.

For Upma:

Rava(semolina)----2cups
onion-------------1
green chillies----2
water-------------1 cup

Dosa dough

Put 4 parts of rice and 1 part of urad dhal and grind .

Procedure:

First prepare upma.

Heat the oil and add mustard seeds,green chilli,onions and let it fry.
Add semolina to it and fry till it turns golden brown.
Add hot water ,salt and let it cook.
Now our upma is ready.
Grind onion,green chillies and ginger paster together and add it with dosa dough.
Add salt and make the dough a little more watery than usual dosa dough.
Make dosas as usual.
Then in the front part of the dosa,keep the upma and let it cook for a few seconds.
Remove from heat .

It is so tasty with sambar and cocunut chutney.

Semiya Kesari


Semiya kesari is a very good desert.It is so easy to make and tastes yummy.


Ingredients:

Semiya------------2 cups
water-------------1 cup
sugar-------------1 1/2 cup
milk--------------2 cup

For garnishing
cashews
raisins
ghee.

Procedure

Fry the semiya in ghee till it turns golden brown.
Immerse the fried semiya in hot water.

Fry the cashew and raisins.
Take a deep vessel and add 1/2 cup of water and 1 1/2 cup of sugar and let it boil.
While it is boiling,add the immersed semiya and stir continuously.
Add the milk and continue stirring till it is cooked properly .
Add the cashews,raisins and a pinch of cardamom powder and take it from the vessel.
Transfer to a vessel after applying ghee in it.
