Mysore Pak


This is a very traditional sweet.I like this a lot.My cousin came to my place for this weekend and i wanted to make something special.so i made this and it was so tasty though i didn't get the perfect shape.All my friends liked it.

Ingredients;

Besan--------------1 cup
Ghee---------------2 cups
Sugar--------------2 cups

Procedure:
Lightly fry the besan till the raw smell goes off.
Add sugar to boiling water to make the sugar syrup(syrup should be like thin string)
Add the fried besan and mix it thoroughly.Add ghee in steps.
Keep on stirring continuously .
When it comes off of the vessel,remove from heat and transfer to a plate greased with ghee.
After it cooled down cut into pieces.

You can taste very good mysore pak.If you want it to be more soft add little more ghee.You will love this .

Onion Sambhar


Onion Sambhar is a very common weekend dish.It is really so good with potato roast.My friend asked for the recipe and here you go.

Ingredients:
Small Onion-----------------2 cups
Tomato----------------------2
Tamrind paste---------------1 spoon
Toor Dhal-------------------3/4 cup
Mustard seeds---------------1 spoon
Sambar Powder---------------3 spoons
Salt------------------------1 spoon


You can get any sambhar powder for this.Also you can make the sambhar powder.I will post the method soon.


Procedure:
Heat little oil and fry mustard seeds,onion and tomatoes.
Fry the onions till it turn light brown.
Then add the tamrind water and add little turmeric powder and salt
After some 2 min add the sambar powder and let it boil for 15 to 20 min.
After the aroma arises add the cooked and mashed toordal and allow it to boil for 5 min.
Sambhar is ready.
Likewise you can make other sambhars with different vegetable like carrot,lady's finger .

Chenna Masala


Chenna Masala is a good side dish for chappathi.It contains more protein and fiber.I like this dish a lot.It is so easy to make.

Ingredients:
Kabuli Chenna----------------2 cups
Tomatoes---------------------3
Chopped Onion----------------1 cup
Cumin and mustard seeds------1 spoon
Corriander Powder------------1/2 spoon
Garam Masala-----------------1 spoon
Chilli Powder----------------2 spoons
Turmeric Powder--------------1/2 spoon
Ginger Paste-----------------1 spoon
Garlic Paste(optional)-------1 spoon
Salt-------------------------1 1/2 spoon

Procedure:

Soak the chenna in water for some 8-12 hrs.
Cook the chenna in Pressure cooker and leave 2 whistle.Make sure that it does not cook fully.
Heat Oil in a frying pan and add cumin and mustard seeds.
Fry the onions till it turn light brown.
Add the tomatoes and all the masala powders,ginger paste and mix it thoroughly.
After the aroma arises add the cooked chenna.
Add the chilli powder and salt.
Add 1 cup of water and allow it to cook for some 10 min in medium heat.

Now garnish with cilantro and serve with hot chappathi or bread.

Chili Parotta


Chili Parotta is a very famous dish in tamilnadu.Here we get frozen parottas,instead of eating just like that we can make this.My husband really loves this with raitha.
I tasted this once in my friend's home and made it.It turned out so good.

Ingredients:
Parotta--------------4
Tomato---------------3
Red Onion------------1
Cumin Seeds----------1/4 spoon
Fennel Seeds---------1/4 spoon
salt-----------------1 spoon
chili Powder---------1 1/2 spoon
Oil------------------

Procedure:
Heat the oil and fry the cumin seeds,fennel seeds.
Fry the onions and tomato.
Add chilli Powder and little garam masala, salt and mix throughly.
Thaw the parottas for 1 min in microwave and tear it into pieces.
Then add them with the masala and mix it.
Chop the parotta pieces and mix it well.
Leave it in heat for some 5 min and then remove it.

It tastes yummy.Try it and leave comments.

Paneer Butter Masala


Paneer Butter Masala is a very common side dish for Nan and fried rice.My husband is a big fan of this dish.My friend Arthi taught me this recipe and its a great pleasure for me to share with you.

Ingredients:
ChoppedOnion
Butter
Fennel Seeds
Cumin Seeds
GingerGarlic Paste
Paneer
Tomato
Chillipowder
Turmeric Powder
Coriander Powder
Peas
Capsicum
Garam Masala

Procedure:
1 Heat the Kadai,pour one tablespoon Cooking Oil, 2 tablespoon butter
2 Once heated add 1/4 tsp Cumin seeds,1/4 tsp Fennel Seeds,as it splitters add chopped onions
3 When the aroma arises add ginger garlic paste and garam masala.Wait
till the raw smell goes.
4 Then add chopped tomatoes,chilli powder,turmeric powder and coriander powder
5 Once the gravy cooks add peas and capsicum and salt.
6 Then add fried panner
7 When the aroma arises add whipped cream(2 cups) for thick gravy and
let it cook for 5 min and remove from heat.

If you do not want heavy gravy need not add whipping cream.

Banana Cutlet


Banana Cutlet is one of the healthier evening time snack.I first made it and my friends liked it.Here you go

Ingredients:
Bananana-----------------2
Potato-------------------3
Grenchilli---------------2
Onion--------------------1 (big)
Ginger Garlic Paste------1 spoon
Garam Masala-------------1/2 spoon
Salt---------------------1 1/2 spoon
chilli Powder------------1/2 spoon
Maida flour--------------3 spoons
Bread Crum Powder
Oil for frying

1 Peel the Bananas and cook in microwave for 5 min.
2 Cook the Potatoes and keep it ready.
3 Heat the oil and fry the onions,green chili and mix with ginger garlic paste,garam masala.
4 Then add the potatoes and mix it with the masala.
5 After some minutes add the banana and salt,chili powder and mix it thoroughly.
6 Remove from heat and mix it with maida flour.
7 Make small balls with this and flatten it.
8 Heat Oil in a frying pan .
9 Garnish the balls with bread crums and fry it.

It tastes good with tomato sauce.

Winter Melon Kootu


This is one of the favorite side dish for my husband.My mother in law is an expert in this and i got this recipe from her.It really does tastes good.

Ingredients:

Winter Pumpkin---------------1 cup
tamarind paste---------------1 spoon
Tomato-----------------------1
cooked chana Dhal or Toor Dhal.

To fry and grind
Coriander Seed--------------2 spoons
Chana Dhal------------------2 spoons
Urad dhal-------------------2 spoons
Asafoetida------------------1/4 spoon
Red Chilli------------------3
Pepper----------------------5
Cocunut---------------------3/4 cup

Procedure:
1 Fry the above and grind it.
2 While grinding add the tomato and grind it.
3 Fry the winter melon (white Pumpkin) for a few seconds
4 Allow it to cook in tamarind paste.
5 When it is mostly cooked add the masala (we grinded),salt,little turmeric powder.
6 Cook for some time till it is not so thick or watery.
7 Finally add the cooked dhal and mix it thoroughly.
8 We can also add some fried peanuts in it.
